Set crockpot to high, allow to come to temp. Apply all seasonings to beef. Add a few tablespoons of good evoo to coat bottum of crockpot. Brown beef in the oil.(3mins) Add (diced) onion and pepper. Stirring for 3-4 mins. Add the cans of soup followed by the mushrooms. Let pot cook on high for one hour. Turn temp to low add a generous splash of red wine, stir the shit one last time, put the lid back on and let it do what it do for 8 hrs.
Cook your rice or egg noodles.......
I put mine in a healthy sized bowl. I slice about 7-8 cherry tomatoes in half and let them soften just a bit in the gravy. Hotsauce...Pepper sauce. A little extra s&p........

I make something similar to this. I use a couple of slabs of cream cheese instead of your soups. I then add onions, mushrooms, salt and pepper, curry powder. The red wine can be used to marinade your meat before frying. The alcohol will break down the meat and make it more tender.
