How in the heck does the avocado stay together? And how does the thinly sliced chicken not fall through the grill grates?
Can't you just spice rub a whole breast put the avocado on top and then go from there? I'm a bit confused.

You slice the breast lengthwise so you still have larger think pieces.
You slice the avocado and you put it on top of the chicken after you flip it. The idea is to get the avocado warm. It will only end up on the top of the chicken for a few minutes.
