1 Lg Red Onion
1 Can Refried Beans
1.5lbs Ground Beef or Chicken
1 package pork chorizo
1 package Mexican blend cheese
1 bundle cilantro
1 package med sour cream
2 tomatoes
2 avocados
1 package fajita tortillas (10 Pack)
Dice red onion and chop cilantro. Cook meat and onions until brown seasoning to taste. As the meat nears browning add cilantro. If you are omitting chorizo then add salsa to meat to spice. Cook chorizo in pan or heat in microwave. Heat beans in pan or microwave. In a 9x13 pan add 5 fajita tortillas cutting one in half. Arrange 4 tortillas at each corner about half way up the side. The last tortilla that is cut in half can be added to the middle to allow a border around the edges. Once the tortillas are laid down spread beans over tortillas. Add a layer of cheese on top of the beans. Then spoon chorizo over cheese and spread evenly. Next add meat and spread evenly. Then add sour cream and spread evenly with another thin layer of cheese (this will hold the top layer of tortillas in place. Next cut 4 tortillas in 1 1/2 to 2 inch slits. Add these to the top making sure they do not overlap. Add additional cheese on top. Cook in preheated oven at 350 for about 20-25 minutes or until top layer of cheese is melted and tortillas are brown along edges.
Garnish with pico de gallo, sour cream, tomatoes and avocado.
