DUCK

What up fellas? Any outdoorsmen out there with some good recepies for cooking ducks.I've tried several different ways but recently ran into some cajuns that gave me a recepie to try.I haven't yet but I thought while I was at it I could get a few more.

PS I gotta look up some stuff on that cajun recepie I have to make some ROO? Some kind of cajun slang that they say not many people know about. Some kind of gravy is what they said. Any cajuns care to shed a little light on ROO? Or whatever the hell irts called LOL...they say they learned from some CoonAsses.

Here's my fav on the ducks right now. I jerky the rest of the bird, but the breasts are where it's at.

Breast out bird. Butterfly each breast open. Take one slice of cream cheese from a block, and lay it in the butterflied breast. Put one water chestnut, and two jalapenos on cream cheese. Fold breast back together, making a sandwich out of the breast. Lay out raw bacon flat. Stick breast on bacon and roll it up. Put two breasts per metal skewer. Take a fish press for barbecues, and put your skewers in the press and fold it over so the shit doesn't go everywhere. Get your barby as hot as you can get it, and cook the duckies on each side for a couple minutes. when the bacon is done and crispy, the duck is rare and juicy. The boys and I at the duck club call em duck poppers. They're to die for. Of course, enjoy with your favorite beverage.                                             Yours being Wild Turkey.

Once while hunting in Colorado I ran into some guys from Wisconsin and they offered up some smoked duck.

Man it was some good stuff, but then again anything camping seems to be better.
