Can pull it out of the oven and throw a fish fillet on top and throw it back in the oven (knock the heat down to 350-375 or so and throw on some butter, and sliced lemon and back in the oven for ten minutes or so).
I like to "julienne" the squash and zuchini and half moons on the onions. Cherry tomatoes cut in half. Large tomatoes halved or quartered. Can possibly add a little butter or lemon.

what you can do with squash or zucchini is julienne a whole bunch of them...steam them then pour in a sauce mixture made from from a little butter, olive oil, fresh garlic, parmesean cheese
reheat for a few minutes until everything is nice and coated with the sauce concoction

Good for anything going into the oven and also good for marinating meat or something. The nice thing about them is they are also decorative enough you can also serve food in them. Just pull out of the oven and throw it right on the table.
