    Healthy Side Dish / Cucumber, Tomato, Onion Salad

    Not balls to the wall delicious but it's something healthy to eat on the side and easy to make.
     
    Diced Tomato
    Sliced Cucumber... i like the half moon shapes
    Paper Thin Onion Slices.... red onion best but anything works.  If it's potent onion, cut it super see through thin.  I cut in "half moon" shapes.
     
    Toss in some vinegar (red or rice wine best) and a little olive oil (can skip the oil if you want).  Salt, pepper, and some herbs if you got them.  Cover it and let it marinate for a little bit.
     
    I threw some raw broccoli in there today with it and didn't taste too bad.

    But as always eat the skin cause that's where all the good shit is... UNLESS it is a waxed cucumber though

    Not to spend too much time in one place  but make sure you cover that bowl with plastic wrap or it will dry out

    Okay was talking in the penalty box about this a week ago with Iron Mike and he told me to use water instead of vinegar.

    Thought he was horseshit crazy but he's right.  Made this with oil and water instead of oil and vinegar last night and it actually tastes better and I love vinegar.

    Gotta have the feta in there though.

    Oh and also, instead of "dicing" the tomatoes, cut them in wedges or even better, large rectangles for a more modern look.
     
    By the way, buy the largest tomatoes in the store.  They have less skin ratio and you are paying by the pound anyway.

     let it sit over night covered in the fridge with some Dried parsley,oregano, or italian seasoning flakes and grab a loaf of italian bread and you have a very tasty meal...leave out the bread if you are going for the heakthy angle
