Hutch, i eat fish 4 days a week...get yourself some wasabi mayo, mix with parm cheese, fresh garlic...coat the fillet....it rocks!

Tried another recipe this weekend. Mustard roasted Red Snapper (how cool is it to tell your female co-worker that you are having red snapper for dinner).
1 cup sour cream
3 Tablespoons dijon mustard
1 Tablespoon ground mustard
1 shallot...finely minced
Combine all ingredients and cover filets generously (place filets skins side down in a baking dish coated with cooking spray). Cook on 350 for 12-14 minutes or until fish flakes with fork.
Works with any white-fleshed fish.
