I really like root vegestables. All kinds, from parsnips to carrots and different type of beats.
They are great with curry dishes but also baked.
I was surprised how many different kinds there are link I love to bake them in the oven and add salt, garlic, basil, black pepper, paprika and olive oil. Maybe drizzle some fresh parsley over it when cooked.
Those roots is my favorite type of vegetables. When baked they do not taste like green at all.

I gotta figure out veggies that I can really get to not just forcing it down, but actually liking them. I have a cool little steamer that I've only used for shrimp/shellfish or fish. Steamed veggies I hear is the best way not to cook the nutrients out of them.
Steamed shrimp with Old Bay all over them. Always good. I'm not a rice guy, but it was nice when I dated a gal from the Phillipines first year in Bay Area....She always cranked out the rice, and I cooked the fish and other seafood, occasionally chicken. It's only been in the last 4 years I've just gone getting a really good filet or prime rib. I can feel the iron benefits after the 2nd bite. I know Outback is a chain and all, but it's such a mindless choice of a place that is quick in and out. Love their ceasar salads, and I get a sweet potato. I dont have the patience to bake a potato at home. I can cook excellent fish in about 20 minutes.....Just don't mess w veggies....Not really smart, but I take a bunch of health crap. Except for some bone injury crap, my health is good. I never get sick. Just run over by cars and stuff.
