JWK's post about farmers market wings got me thinking about a meal I made recently.
Short Ribs purchased from the farmers market.
Pretty tight.
Simmered in sierra nevada pale ale / beef broth mixture for close to 5 hours.
Then coated with a sirracha, lime, ginger, hoisen sauce mixture and tossed in the over at 300 for about 30 minutes (turned and recoated 4 different times during this 30 minutes). Then ramped the oven up to broil and cooked for about 3 more minutes just to give it that bit of crisp.
I was not sure going into it as I have never cooked them before but they were real good.

sound good. i still use the 3-2-1 method - 3 hrs on smoke, 2 hrs wrap in aluminum foil and 1 hr to baste. i always peel off the silver skin and brine mine for at least 12 hours.
