Pretty simple, standard recipe...
Chop 6 strips of thick cut bacon, and cook in a skillet...
Cook grits according to instructions on package... MOST will have to use QUICK grits by quaker oats.... DO NOT get instant grits. Plea, please, please use REAL grits if you can get them at the store. I could not today at 2 different groceries today, for some reason. I went with quick.
Cook 4-5 servings according to the directions. Salt and pepper as you wish. Add a little milk, 1/2 stick of butter, and 1 monster handful of shredded sharp cheddar cheese as you take them off the heat...
scoop out the bacon bits onto a paper towel to drain the grease...
In the bacon grease left in the pan....
Put in 1lb of fresh, peeled shrimp. Cook about 3 min total till just pink.... DO NOT OVER COOK, unless you like chewing on rubber.
Just as the shrimp are almost done cooking, finish off the shrimp with 1 or 2 diced cloves of garlic, a decent amount (hand full) of FRESH chopped parsley, and 3-4 sliced green onions (shallots)... use the whole thing, white and green part. Squeeze a whole lemon over it all....
Scoop out grits into an individual bowl, then spoon the shrimp over the grits.. Put a little bit of the juice from the shrimp pan over everything to add some amazing flavor....
Top with bacon bits....
Finish with beer...
Bud American Ale now makes a 12 pack... Not a great beer... but not too bad when considering price and flavor combined....
