1/2 lb extra sharp Vermont white Cheddar 1/2 lb extra sharp aged New York (orange) Cheddar 1 (7-oz) jar pimentos, drained and finely chopped 1/2 teaspoon black pepper Lots of Cayenne to taste 2-3 finely minced Serrano Peppers 2/3 cup Mayo.... the good stuff Hellmans 1 Teaspoon Minced Garlic
Mix in a bowl. Typically add the mayo last. Depending upon desired texture. Regrigerate for an hour to let the flavors mingle.
If you want to get cute, shape it in a square block and surround it with Ritz crackers and throw a piece of parsley on top. Also makes nice and basic sandwiches on white bread.
