They just cook as a whole and pick the flesh with chopsticks. The fish doesn't yield much meat when you try to fillet and its bone structure is just strange. Bones are there on both top and bottom of the fish as well as the vertebrae. This is probably why Americans generally don't eat this fish. They call it "Gal-Chi" in Korea. It's best when char-grilled.

He always adds some good fishing trips like guiding the line with your fingers when dropping the bait deep to jig. Doing that helps avoid a backlash that delays you from fishing and is a pain in the butt to fix.
I've never seen a ribbon fish before & I was surprised to see the nice filets get got out of it. This sea bass have a nasty fin on them that will hurt if you get poked.
