They don't split them up.
In the history of the NFL, (since the first conference championship games was played in 1970) the two conference championship games have always been on a Sunday - they have never been "split up" with one game on a Saturday.
The starting times won't be announced until the teams are determined, but usually the first game is on at about 1:00 pm (Eastern Time) and the other game at 4:00 pm.

Me and a few friends have a room at Harrah's for this weekend. Should be a great time...late night Saturday, wake up, gamble, and watch 7 hours of football on Sunday.
