Mandalay Bay is a great place to stay. Go check out the beach and the wave pool. It's great. They also have a lazy river and Moorea Beach Club is great -- European style, which means the chicks have the option to go topless. I know they put in a new nightclub too, although I haven't been, I hear it's nice. Lots of good dining options, with the buffet being solid.
The sports book at Mandalay Bay is big and spacious. Lots of seats and lots of big screens. That day that you are referring to (Sunday) shouldn't be that crowded.
As for drink tickets, you might get a couple, but they aren't real generous with them.
As far as other sports books, and since you are on the south end of the strip, make a right out of Mandalay Bay and head south to South Point. It's about a 10 - 12 minute drive. Their sports book is awesome, spread out, good lines, and they are good about giving drink tickets. Tip them some bucks on your winners and they will really hook you up. (Btw, South Point is great all the way around --sports book, beautiful cocktail waitresses, movie theatre, bowling, Steak n Shake, friendly staff, clean and cheap to stay at, etc.)
Also, you could stop by the outlet mall on your way or way back from South Point, to treat yourself to some nice gear from your winnings. It's on the left as you head south, past the airport and next to Manor Suites.
