I am going to vegas the first weekend in may for a bachelor party.
are there any casinos (dont have to flashy or well-known) that will let a group of 12 guys reserve a private poker table with a dealer for a few hours. or even better, are there any places that have private rooms, maybe something with one roulette, one blackjack, one poker....
trying to organize something fun that we cant do at home.

off the top of my head i cant think of any, unless you your playing 500/1000 blinds. where are you staying? you should tell them what your trying to do and ask if theyll hook it up. the rooms do exist (i know bellagio has one) but those rooms are known more for extremely high rollers and poker pros than a bachelor party. you could get lucky and one of the days your there will be slow, in which case they might rent it out

Hard Rock will without question. There is a Hard Rock poker room representative with a thread open on 2+2 that would answer all your questions. The thread is in the brick and morter section.
