I'm a dinosaur now but when I worked in Vegas, pre A.C., pre-corporation (oh it was so much better) once you got passed the break in stage (dealers) you'd go look for a job and they'd put you on a game for an audition.
Mainly this was to see if you really had knowledge of the game and could get around the layout.
At that time 'personnel' was a white memo pad on the pit boss' podium and you were told to leave your name and phone #.
If the guy liked you or knew you they'd tell you to put their initials in red ink at the top of your application when they called you in.
Re: sports books, a guy I worked with always wanted to be a sports ticket writer - to get a feel of which way the betting went, etc....and to see the games. Well he got a job and realized his back was to all the TVs the entire shift.
