I was out there 4 years ago over the Thanksgiving week/weekend. The crowds are definitely less, although still plenty of tourist types. Some of the bigger shows are also dark that week. I've noticed lower limits on the tables compared to other times that I've been there.
Many of the buffets/restaurants will have a special Thanksgiving theme for that Thursday, but otherwise they're business as usual from what I remember.
