If you want to bet the dog, you have to think they will win SU and not hope they just cover the spread. Only 3 dogs have won this conference so far, and all three won SU. (ROS 1st game, MER 2nd game and MER again 8th game).
I would say I would lean overs as well because teams play to the end. I would only take an Under on an out of town game, and on selective teams situations (I think it will be a blowout, Alaska games, etc.)
