Anyway, I've been in your exact position MULTIPLE times years ago when I was 20/21 years old and a broke college student. You get these bookies who knowingly give out huge credit lines to kids who they know are gonna lose it all. Back then I had a credit line of $2,000 and I maxed it out in a few days and I didn't have the money. I just straight up told him that I'd give him a certain amount each week until the money was paid in full. He wasn't happy at first but it got the job done eventually. Once I paid that bookie in full, I would find a new one to get a line with and I'd max that one out and have to do the same thing all over again lol. This happened maybe 5 times when I was that age. I was young and stupid and had no idea how to manage my money.
Over the years I've learned that money management is KEY and it's the only way you can profit from this. Just learn from this mistake. Tell the guy that there's no way you can pay him in full and you're willing to go on a payment plan. At the end of the day, they just want to get paid. The days where you'd get your legs broken are over. Especially over just $2,500. No lives are gonna be lost over this so I wouldn't worry too much about it - life will go on. Good luck.

If the answer is no to the first and yes to the second, I would look at getting a personal loan with a fixed rate. Either that or if this guy is friends with you, see if you can pay him over time with a certain amount each week/month. (I doubt this is an option but I have many friends who's bookie is yet another friend of theirs.)
