Both my internist and my gastro-enterologist who performed my colonoscopy said that I was NOT celiac. However, horrible consequences after eating an individual pizza about 4-5 years ago encouraged me to make changes.
I cut way back on gluten. I stopped eating bread, pasta, gravies, fried food and wheat beers. Since almost all of the reviews of gluten-free beers were negative, I just switched to low gluten beers ( check out Gluten in Beer blogspot and LowGluten.org).
I now have virtually no nasal mucus or oral phlegm. My violent sneezes capable of rattling windows are now extremely rare. I lost 11 pounds (all from my spare tire) without dieting - indeed, since my morning breaks now feature two Larabars, one Cliff Mojo bar and nuts - probably 700+ calories, I may actually be consuming MORE calories. I also have less diarrhea.
I am firmly convinced that the three major junk carbs (wheat, corn and refined sugar) are major contributors to obesity.

i did the same thing, sort of. i used to have stomach issues a few times a year and the doctor tested me for celiac. he said i didn't have it but i should consider eliminating gluten.
i didn't eliminate it entirely but i cut way back on wheat, gluten and carbs with that garbage in them. i don't drink beer much anymore.
three obvious effects:
1. no more stomach problems
2. i used to get a bad cold twice a year like friggin clockwork. i haven't had a cold in several years.
3. more effective exercising and joints are in better condition although i still have issues.
