It's not that hard just need a really sharp knife. That is what's key.

And of course fresh sushi grade fish.

I have done it a handful of times as well. IMO the most annoying part is rinsing out the sushi rice.

I do it twice a week salmon or yellow tail.

Skip the rice.

sashimi just means raw sliced without rice. Only the finest is sashimi style.

Buddy of mine is a commercail line tourny fisherman. Every month he loads up a grocery bag packed with vacum sealed pro grade 300 mile offshore Hamachi, yellow tail king salmon, grouper.....fresh off the boat. Each piece is worth about 75 clams at least. 

Good guy and I'm very lucky.

You must need a lot of protein to recover from those torrid forearm sessions.. Those wrist curls and pick up lines are a killer
