The Sting and Let it Ride are 2 of my favorites. Rounders is of course up there....

Two older movies, The Gambler, with James Caan (scene with him in the bathtub listening to the end of a Knicks game is classic), and California Split, with Elliott Gould are near the top. The Sting, while a great movie, is really about con men and revenge, not gambling. Also, The Cincinnati Kid is a terrific movie, tho I haven't seen it in years.
Rounders is, in my opinion pure rubbhish, though a very romanticized kind of rubbish. The scene where he walks into his professor's apartment while a game of seven card stud is going on and after seeing everyones up cards and one round of betting, tells everyone what they have in the hole, is pure bullshit. Even worse, tho, is the high-stakes game with the firemen that ends with both the stars getting their asses kicked. In that scene, Worm played by Edward Norton, is getting ready to deal a havd (he is cheating to give his buddy winning hands) and no one in this high-stakes game where thousands of dollars are changing hands, cuts the cards. Simply doesn't happen. In all liklihood, a game for those stakes would have a paid dealer. When a movie that purports to show the real nitty-gritty of something, makes glaring mistakes, I can't take it seriously.
