You need to go to Canada before you understand what "full of Asians" truly means. 
Imagine if all the Mexicans in Cali were Asians too. That would be reasonable comparison.

I was born in Vancouver, grew up in Toronto and I now live in CA (OC area).
I would recommend Vancouver just for the fact it is an easier flight and a beautiful city and area, much more than Toronto (if you are going to the east coast I would recommend Montreal). Toronto is a big multi cultural city like SF - so it would not be that unique from your perspective.
I would spend a couple of days in the city (you received some good advice above) but then I would definitley plan a couple of trips.
Shocked no one has mentioned Whistler yet - only a little over an hour from Vancouver and lots to do both in the summer and winter (if you are going in the winter it is a must).
Also Victoria (awesome island), the Ocanogan is great lake country and if you are out that way you could also do banff. Driving through the rockies is a must even if is just a day to sight see.
Just my thoughts...the locals will know the restaurants and bars to hit.

Thanks again guys. Whats the best way to get around. Do they have metro, bus, taxi (I know Taxi can be very dear) or rent a car.
I am surprised by the big Chinese population. I do go to San Francisco a lot and it is a huge melting pot but surprising but not many Mexicans. Most Mexican follow the agricultural market because its seasonal and not much of that in San Francisco but huge in surrounding areas. If I had to guess I would say tomatoes and grapes are the biggest in Northern California. When I was in High School I worked on tomato harvesters. Good pay but man it gets hot.

Been to Banff 5-6 times. Really hard to describe the beauty. Also,
I can't catch fish to save my life, but the Bow River ( which runs through the area ) provided trout after trout about as quickly as you could get your line in the water. I know no one who has been disappointed visiting Banff.

If you plan on doing day trips out of Vancouver then rent a car. Real easy at YVR. If you plan on staying downtown then just take a cab from airport. The heavy Asian communities are near the airport (Richmond) but downtown Vancouver is beautiful and full of cityiots. Stanley Park, Kitsilano Beach. Yaletown. Granville Island. Vancouver.com might work.

The price to rent a car in Canada has LITERALLY TRIPLED in the the last few months. I'm not sure why but it has. You need to rent one in the states or really do some shopping around. This will save you nearly a grand.
