Wonderful Tonight is a great song and we have done it before, but really not one you want to open with. From experience, when you are playing on a Friday night with a bunch of rowdy drunk people the last thing they want to hear is Wonderful Tonight, unless you are Eric Clapton. Have to come out rocking.

I've seen hundreds of cover bands...even if you are billed as a classic rock band, people still like to hear something a bit different every once in a while - just for a change of pace.
Play a song that just about everyone likes. Rockers, Bikers, Alternative kids: She Sells Sanctuary by the Cult. Great lead in of a song, and just about everyone knows it. Gets the blood going. Black Betty is a great song as well like suggested, everyone knows that one.
I see you have I Love this Bar in your playlist. Try a Johnny Cash song...Everyone likes Johnny Cash. Ring of Fire, or Folsom Prison Blues. Maybe throw one in the first set someplace.
I think it is important to really get the feel for an audience. What's working and what isn't. Set lists should never be in stone. You need to get the girlies up dancing right away, then the guys will follow. Dance, female friendly songs (if that makes sense) should be the order of the day in the first set. By set 2 everyone is usually so pissed it doesn't matter too much

We have a good time, our audience gets into it. We are always changing the sets. During Mustang Sally we invite all the ladies on stage to sign "ride sally ride". They really get into it.
If you have enough women out that are obviously in a party mood and dancing, throw that in the first set. You play it too late in the day...
