Hogan , P , i need your help 

 

a friend just stopped by , back from a 2 night fishing trip Long Beach down into Mexican waters

he caught a large Blue fin Tuna , gave me a bag 9-10 lb piece 

should i slice it into steaks and pack piece by piece in a freezer bag ???

how thick would you cut each steak ?

Fisherman here in So Cal….

 

id freeze the tuna into serving size portions, like what you can eat in 1 serving , you won’t be able to refreeze once thawed…

 

also once dethawed, wrap in paper towel to pull the moisture out of it.  Maybe like 12-24 hours in the refrigerator.  Or wrap while dethawing.

 

change out paper towel as it get wet.

Freezer bag, make sure to remove all the air,  probably have 4 weeks shelf life before it gets freezer burnt.

 

vacuum sealer gives you 4 months.

Talking to buddy of mine that owns local grocery store today, has amazing place on water.  Said him and his son were out yesterday and got a 5lb and 10lb lake trout.an_worship
