Made this once..... extremely good. If missing an ingredient or two, not a big deal. Leftovers are money and also freezes.
2 lbs. lean stew beef, cut into cubes 2 T.flour 2 T. butter 1 T. Olive oil 1 tsp. salt 1/4 tsp. pepper 2 cups beef broth 1 cup burgundy wine 1 medium onion, chopped 1 large carrot sliced rounds) 1 clove garlic minced ( I use the dried minced garlic ). 1 bay leaf 1/4 tsp. thyme 1/2 pkg. frozen pearl onions 1 cup sliced mushrooms (canned okay) 1 T. chopped parsley.
Toss the meat in flour, salt and pepper (in plastic bag) and brown in fat. Add consomme, wine, onion, carrot, garlic, bay leaf, and thyme. Simmer 2 1/2 to 3 hours until meat is tender. Add parsley, small whole onions and mushrooms just before serving and simmer until hot. If you have cooked it the night before as I do, add those last 3 items the next day when you reheat.
If more liquid is needed during cooking, add consomme and wine in proportions of 2 parts consomme to 1 part wine. Makes 4 - 6 servings.
Serve over Egg Noodles.

They enjoyed it I did not. Thats all there is too it. I do not really like wine, bay leaf, or thyme. I also do not like hot carrots or mushrooms. I like a more basic stew with not as many ingredients

I do not mind the mushrooms on a chicken marsala dish but I would prefer sauteed onions on a nice piece of meat. ya know? but all in all not a big stew fan but i certainly remember that one haha.
