First thing is first, you'll never get an order like this without offering some type of large discount for a company. I never got stiffed on a large order like this, and most were 10-20% tippers...however there was an agreement with my managers at the time. If a large order like that stiffed, we'd essentially recall the order and edit a discount. Essentially if the order was $400, and company gave me a check for $400 with no tip....you recall the order add a discount and it only shows up as a $350 order...thus giving the driver/manager a tip.
We didn't have to use this method, but every pizza company has the ability to do it if needed.

on an average friday night, i pull in about 130-180 in tips alone. that doe not include $5.25 an hour for what is about an 11 hour shift(4:30pm-3:30am). factor out $25-30 for gas, and about 10% for the cooks, and i probably average, including hourly, 175 for 11 hours of work.
as with most high volume delivery places these days because of the cost of gas, there is usually an additional charge for any delivery, and ours is $2.00. of course that is factored into my tip earnings mentioned above.
i would say an average tip is anywhere from 2-3 dollars. this factors in all those douchebags that stiff you or give you a 20 dollar bill for an order that is 19.90 and says keep the change, like hes doing me a favor, but also factors in some of the bigger orders where 10% of the order is a 5 or 7 dollar tip. amongst 4-5 drivers a night, we average 30-35 deliveries each.

Who were these being delivered to? Lebron James? A lot of Pizza places already add some type of delivery charge. We usually leave $3.00 for a Large or extra large from Papa Johns(They add like $1.50 or $2.00 for delivery, I assume to cover fuel charges)
That is a good point. Is that delivery charge given to the driver to offset gas / miles on the car or is that just another method for the store to make money?
If it goes to the driver than the gas / miles issue has already been addressed.

the delivery charged assessed usually goes straight to the drive as payment for gas. most drivers, such as myself, just kinds throw that into our final tip number but that is the answer to those asking or suggesting that the owner should pay for gas

i'm definitely not condoning the actions of people doing "sh1t" to people's foods upon delivery but this can be reality to not only people in the delivery business but to those in any service industry. For me what i like doing is tipping after i put in the order. I know it's stupid but it's very smart to play defense first for me at least, so that i can get the opening kickoff in the 2nd half, know what i mean?
Don't mind me because i consider myself to be a very "fair" person, in other words i am not making "hardly" any friends, and "hardly" any enemies. But i love it this way. For those who are very close to me with what few that i choose to have, i know exactly what to expect from them and them from me. For your drivers to get great tips i feel is a reflection of you as the boss, especially if you are confident enough to have someone pm you so that they can experience your joint and then have access to your employees.
i can only offer to explain the actions of other employees who might not work for a gourmet place like yours, but i probably won't excuse them no matter how bad everyone might not tip. The least they can do is prepare themselves to get another job while they have the one that's paying them like crap.
You should be proud of your happiness, mafioso as well as your employees.
