If you want to experience an old-school LV steakhouse..check out the Golden Steer on West Sahara.Opened in 1958.Went there in 1986 on a 3 day stay at Stupak's Vegas World and buddy and me pretty much stumbled into/upon the place looking for some substance mid trip one night.
Couple years ago I asked a Vegas message board about the place and found out the name.They are online w/menu and thier history.Never bother to go back as a steakhouse sit-down dinner is never on the Vegas agenda nowadays..But that meal was the best I ever had.

Hated Smith and Wollensky's. Typical corporate garbage.
Landry's - I think all they do is prime rib. But they do it very well.
Gallagher's - By far one of the worst steakhouses I've ever been to.
My winner is Craftsteak at the MGM. They do the fancy wagyu and kobe varieties there as well. But their regular steaks were cooked perfect and the sides weren't too shabby neither.
Cant wait to be back!
