People leave the dough in fridge to set, and then wanna make the pie soon as dough sets. Gotta be room temp. Or slightly hotter preferably. If you go into a legit Italian pie joint, and watch them make a fresh pie, you will usually see them grab a dough from some container or sheet pan under shelving or something.....nowhere near a fridge, like its been out for days. Also water level in the dough needs to be right. Personally I like a little extra butter in my dough also. IDK if it helped not burning, but I find a little extra butter will make the dough rise better, be crispier.. Biggest 2 culprits for burnt pizza pie
