Texas Favorite but losing already..

It seems that lots of times the higher the consensus favorite.. The underdog seems to either win or cover..

Why is this? 

You would think if consensus is over 60% you would have a little better chance but you lose?

If a game opens at -6 then moves to -7 near game time? what does this mean?

or if reverse happens... opens at -6  then closer to game goes to -5 what does this mean?
