Was thinkin today was Friday, Oh well. Another EZ and Cheap one dish meal.( Feeds 8 hungrey people.)
1 lb. box elbow macaroni ( or the squigglie kind )
2 Tbls Veg. oil
2 cups chopped bell pepper(Very important)
2 cups chopped onion
1 tbls chopped garlic
2 lbs Grd beef
3 cups canned chopped tomatoes
Salt and Pepper
1 Teas each Dried Basil, grd. cumin, and dried oregano
2-3 cups grated cheese(I like SHARP cheddar)
Cook the macaroni according to package; Drain and set aside
Heat the oil in a skillet; add peppers,onion, and garlic,and saute
Add grd. beef and saute til browned.
Add tomatoes, s/p to taste,and the basil, cumin, and oregano
In a large bowl, combine macaroni, about a cup and a half of
the cheese, and beef mixture.
Spread this mixture in a 9"x13"baking dish or pan.Top with remainding cheese and Bake 20-25 min. @ 350 deg.
****Keep an Eye on it ,Don't burn the cheese.****
There U have it....also makes great leftovers
Recipe can be cut in half for a smaller group.Cooks note: for you health nuts, chicken or turkey can be used.
