I'm pretty sure they are the king of tacos.

Here are the fresh/local mahi tacos I made tonight.

That fish looks good........... so do those tortillas.  Those look like real deal tortillas there.

Homemade salsa = red
purple onions = purple
avacado = green
lemons = yellow
jalapenjos = green

You are a hard guy to please.  Why would I want to mask the flavor of my good fresh caught mahi?  Save the crap for the shitty fried tilapia tacos.

That provides color once you dump the little Ramikens on top of that fish.

LOVE fish tacos, but don't order 'em because it pretty much means tilapia in flyover country here.  Going on a Caribbean cruise in Feb. and I will absolutely be hitting some spots down there for some real fish tacos.

And you are absolutely right.  Go simple for toppings so you don't overwhelm the flavor of the fish.

The fish was cooked over the grill with only salt and pepper as seasoning.

The local Mahi here is AWESOME but we also make them with grouper and tuna.

I like to heat up my flour tortillas over open heat right before serving.  

They are very healthy unless you add sour cream (which we don't).

Imo, it just aint a fish taco without purple cabbage. And id switch out the lemons for limes

And theyd be healthier with whole fat sour cream, if you ditched the tortilla

I also suffer from the good fresh fish dilemna. I have a neighbor thats fresh off the boat chilean, and she gives me her homemade "momma sauce". I like to marinade my fish in it, that covers the spicy heat end. I grow my own microgreens, so made a batch with red cabbage microgreens, mommas sauce, lime

Goddam now im hungry, fish tacos are one of my favs, well done jw

agreed, use the full fat products.  that artificial low fat or fat free stuff is garbage.

I do use lower fat salad dressings (if I'm not making my own with olive oil).  I also use light smart balance instead of butter.  I'm kind of used to them.  I don't mind lower fat cream cheese either.

The best lower fat item I've run into is daisy sour cream.  You honestly almost can't tell the difference. 

1 month away from real fish tacos for me.

Looks very good. I've made fish tacos a decent amount of times and I always make a nice sauce with it made of sour cream, mayonnaise, lime juice, cumin, oregano, chipotle chilli powder, and some capers and cilantro mixed in.

I don't even use a red salsa but I'm sure it goes well with it nonetheless.

i had fish tacos at moose mcgillacutty in maui at lahaina ... my favorite so far, the homemade slaw wih the mahi was perfect , the view was nice too
