Lerink gave you some good ones. You may have already heard these but if not here are a few of my favorites...
As far as Dylan goes, it kind of depends on which Dylan you like, the acoustic/softer Dylan or the electric/louder Dylan. I like it all but I like the early acoustic work a lot better. Here are some softer Dylan tunes that are some of my favorites. These are perfect for laying down, closing your eyes, and just listening to how great Dylan's words truly are...
And if you dont like them that slow and quiet, here are a few faster/louder ones...
and if you like them really fast...
And my all time favorite which I think are his best lyrics...

Jimi has a lot of great songs, if you want a more raw sound Are You Experienced is the album for you. Are You Experienced is probably a song you haven't heard, Manic Depression is an intense song that doesn't get that must air play. Great album from top to bottom.
If you want a more polished, mellow sound, some songs are breath taking, Axis: Bold As Love is the album for you. Castles Made of Sand and Bold As Love are the best songs on this album, just incredible. Up from The Skies is a funky little tune as is Little Miss Lover. Another great album from top to bottom.
If you want his masterpiece, Electric Ladyland is the album for you. He has 2 songs that are 15 minutes long, 1983...A Merman I should come to be; is easily his top 2-3 songs. Little Miss Strange(funky Noel Redding tune), Long Hot Summer Night(funky), Come on(great guitar jam, it's sick), and the Rainy Day and Stioll Raining songs are just awesome. An amazing album.
His Cry Of Love and War Heroes albums along with A Band Of Gypies are solid albums as well.
Eric Clapton, is hit and miss for me, when he's on, IMO only Jimi is better, but when he's off it's more eehh. All his stuff with Cream is 1st rate, Derek And The Dominos is as well(great rock and blues album), he has some great rock&Roll solo stuff but I don't like the entire albums. "Can't Stand it", "No Alibies", "Pretending", "The Way That You use it" are some great R&R songs.
