I do homemade steaks as well. Not a fan of the whiz. I prefer white american or provolone but the secret, the secret is in the roll. Hard to find the good stuff. I order Amorosa rolls. I don't do a lot of fast food so I when I do I prefer my own homemade fast food and I like to do it right to make it count. Do you have a slicer or do you have your butcher shave your ribeye?
