If you watched the actual testimony rather than the Newsmax editorial summary, you would have seen three witnesses testify exactly to this point, including one who was able to specifically state based on Floyd's body reactions when the oxygen level in his brain was not sustainable for brain function.

They were. In fact, from watching the defense presentation thus far, I believe they are conceding manslaughter but arguing no malice aforethought as well as contributing factors to the death.

Maybe it is an OJ strategy to present different alternatives from different lines of questioning. But I have not seen that yet. They seem focused on contributory factors of death (manslaughter) rather than claim the Officer was no factor (complete acquittal).
Given that the Government never offered a plea to manslaughter (and my opinion is that is only because of the publicity), it isn't surprising that this becomes defense strategy.
